(A) water, cold (4C/40 F) ----- 85 grams

gelatin powder --- 18 grams

sucrose --- 265 grams

(A) corn syrup or glucose syrup --- 100 grams

(B) water ---- 100 grams

(B) corn syrup or glucose syrup ---- 90 grams

  1. Gelatin powder into water A for 5 mins to bloom and soften

  2. Combine WATER B + SUGAR + CORN SYRUP A into pot and heat to 110C/ 230F (sugar's soft ball stage)

  3. Put gelatin into kitchen Aid bowl + 2. cooked sugar and whip for 5 mins until to have a peak, temp of 30C/86F

  4. immediately transfer the mixture to a sprayed and plastic- lined quarter sheet pan. gently smooth the surface and cover with sprayed plastic wrap.
