Custards

half and half --- 1950 grams (half whole milk and half heavy cream)

sugar --- 450 grams

large eggs --- 400 grams

egg yolks --- 270 grams

vanilla extract --- 25 grams

bring half n half and sugar to boil

whisk eggs and yolks until liquid. whisk in boiling milk in a thin stream. Strain into a clean bowl and skim foam from surface. stir in vanilla extract

Diluted CARAMEL FOR PUDDING

SUGAR --- 450 grams

corn syrup 5 grams

water 60 grams

put into a pot, heat until Caramel

pull into the molds wait until cool and hard

then pull the custards into the molds
