Custards
half and half --- 1950 grams (half whole milk and half heavy cream)
sugar --- 450 grams
large eggs --- 400 grams
egg yolks --- 270 grams
vanilla extract --- 25 grams
bring half n half and sugar to boil
whisk eggs and yolks until liquid. whisk in boiling milk in a thin stream. Strain into a clean bowl and skim foam from surface. stir in vanilla extract
mix the Custards with bread and pull into molds
bake 350 F for 40 mins
